Origin:

The frost-sensitive artichoke originally comes from the Mediterranean region. Today it is grown in all temperate and southern latitudes, but predominantly in the Mediterranean.

Properties and ingredients:

The artichoke (Cynara scolymus L.) was already known as a medicinal plant in ancient times. Already the Greeks and Romans used their digestive effect. Artichokes are rich in bitter substances, caffeoylquinic acid derivatives (cynarin) and flavanoids (luteolin). The gall and liver function is stimulated by the artichoke. Since the liver produces and excretes more bile acid, cholesterol levels are also brought into balance. The artichoke is particularly valuable because of this cholesterol-lowering property.
